5 New All-Inclusive Resorts Opening This Winter, Including Park Hyatt’s First

These buzzy new all-inclusive resorts are slated to open before the end of 2026, with a first for Park Hyatt among them.

There’s a fresh set of options for escaping this winter. Luxury brands long known for à la carte stays are moving into all-inclusive. Three of the five are in Mexico, where Hyatt is building out its luxury presence, and two are on Curaçao. Here are five new all-inclusive resorts opening this winter, based on what each brand has announced.

1. Park Hyatt Riviera Maya, Mexico

Park Hyatt Riviera Maya is expected to be the world’s first all-inclusive Park Hyatt. It sits on a secluded stretch of coastline between Cancún and Puerto Morelos in Mexico’s Caribbean, within AMAI, a private coastal enclave reached through a winding mangrove landscape. It joins Park Hyatt Cabo del Sol, the brand’s first Mexican hotel, which opened in December 2025. The 148 rooms and suites overlook the Caribbean Sea, and some have private pools or plunge pools, while a 2,300-square-foot penthouse caters to guests wanting more space. Each guest is supported by a dedicated Resort Ambassador from pre-arrival onward, and dining is entirely à la carte across seven venues, with refined Mexican cuisine and seafood at the centre, a coffee bar serving Mexican beans and The Botanist cocktail bar, with sommelier-led wine and premium spirits programs throughout. There is also a beachfront pool lined with private cabanas, an open-air spa garden and preferred access to El Tinto Golf Course. Hyatt expects it to open by the end of 2026, with Park Hyatt Mexico City Polanco to follow in spring 2027.

2. Grand Hyatt Los Cabos Resort, Golf & Spa, Mexico

On the Pacific side, Grand Hyatt Los Cabos is set within the Oleada Pacific Living & Golf oceanfront community in Cabo San Lucas, in Los Cabos. Hyatt describes bold, Baja-inspired architecture across 301 rooms and suites, made up of 244 standard rooms and 57 suites, with 42 swim-out rooms among them, and a 4,602-square-foot Presidential Suite at the top. Rooms have breezy balconies and marble bathrooms. Dining runs to five à la carte restaurants and five bars, from a market café and a steakhouse to pan-Asian and Italian cuisine and an intimate speakeasy, and there is an 18-hole Ernie Els Design golf course on site, along with more than 20,000 square feet of indoor meeting and event space for group gatherings. The spa has 12 private treatment cabins, hydrotherapy and a traditional temazcal experience, and families get a splash park, kids’ and teen clubs and pickleball courts alongside an adults-only pool. Hyatt lists the opening for the fourth quarter of 2026.

3. Grand Hyatt Cancun Beach Resort, Mexico

Also due in the fourth quarter, Grand Hyatt Cancun Beach Resort is set along white sand in Puerto Cancún. The resort has about 500 rooms and suites, every one with a furnished balcony overlooking the marina or the Caribbean Sea, and Sanctuary accommodations come with private in-room pools. Dining is a major draw, with Quattro for northern Italian cuisine, Bistrot Cigalette for a French menu led by chef Thierry Blouet, an omakase bar at Fiera San and Chacho for South American fusion, plus Kaab, an all-day restaurant inspired by the richness of the Yucatán. The property has eight pools, including an adults-only infinity pool, plus Ritua Sanctuary Spa, a 24-hour fitness centre and Camp Hyatt for kids. The Points Guy reports a December opening.

4. TUI BLUE Curaçao

Away from the usual resort strips, TUI BLUE Curaçao is on the quieter west coast at Santa Martha Bay, with views of Christoffelberg mountain and spots such as Cas Abao and Christoffel National Park close by. The resort has 297 rooms, from oceanfront rooms and swim-up rooms to family rooms, adults-only swim-up junior suites, senior suites and two-bedroom suites with private pools, along with a sunset pool, five restaurants and six bars. Culinarium serves à la carte dishes, while Mesa Caribe focuses on local specialties. BLUE Spa has a sauna, steam bath and infrared sauna, and activities include house reef diving with PADI certification and stand-up paddleboarding. The hotel is about 27 kilometres from the airport. Guests are expected from October 20 during an “opening phase” in which some areas may still be under construction.

5. The Pyrmont Curaçao Beach Resort, Autograph Collection

In Willemstad’s UNESCO-listed Pietermaai district, The Pyrmont Curaçao is an adults-only all-inclusive in Marriott’s Autograph Collection, a short walk from historic Willemstad and about 20 minutes from the airport. It has roughly 300 rooms, all with ocean views, and incorporates two restored historic buildings. Cerro Bonito is the signature restaurant, serving international cuisine shaped by heritage flavours, among six restaurants and bars. Kas di Pueblo, a restored 19th-century landmark, is slated to become the signature spa, offering massage, herbal infusions, yoga classes and sound baths, and Travel Weekly reports it will open to the public in 2027. Beachfront infinity pools and cabanas round out the setting, and Travel Weekly notes Curaçao’s only oceanfront ballroom. Reports point to a November 16 opening, adding to a growing all-inclusive lineup on Curaçao that includes Sandals Royal Curaçao.

The Hyatt openings follow a deliberate strategy. Javier Águila, president of the Hyatt Inclusive Collection, said the company is “selectively bringing this model” to the Park Hyatt and Grand Hyatt hotels, pairing the ease of all-inclusive with each brand’s design and service. Inclusions differ by property, so check each resort’s own site before booking.
