Paradise found: An inside look at one of the hottest resorts in the Bahamas

Atlantis Paradise Island’s iconic coral towers make it one of the most easily distinguishable properties in The Caribbean. The theme of the landmark resort in The Bahamas was inspired by the lost city of Atlantis — a legendary sunken city believed to now be buried underwater somewhere in the Atlantic Ocean. 

“In Bimini, there’s this myth that part of the lost city of Atlantis still exists there today,” explains Ted Adderley, vice president, sales at Atlantis. “This lost city of Atlantis became who we are and our identity. Even today, we try to manage the lost city of Atlantis and create a more modern contemporary feel to the resort.”

The legend behind the myth is evident across the resort from depictions of an underwater world in the lobby to what looks like remnants of a long-lost civilization integrated into its main marine life exhibits.

 

Focus on conservation

While Atlantis has grown to include five distinct properties, including the classic Royal towers connected by a famous bridge suite, and the luxurious and modern rooms found in The Cove, the resort is all about being more than just a place to stay. “We’re a destination in and of itself,” Adderley says. “And purposely done so that you can find what you need here.”

Along with a massive water park with slides and a lazy river, multiple beaches and pools, a casino, and a luxury marina able to accommodate yachts straight out of Below Deck — and visits by the likes of Drake — Atlantis is home to more than 50,000 marine animals who aren’t there for entertainment value. There’s a major focus on sustainability and conservation with an education centre and animal-rescue rehabilitation hospital on site. Behind the scenes, a team of 165 people, including marine biologists, study these mammals and help nurse them back to health to the point where many get re-released in the wild. 

Food to dine for 

On the guest side, there are many notable restaurant options by internationally renowned chefs on property. The popular Nobu restaurant by chef Nobu Matsuhisa features dishes like Wagyu beef, a wide assortment of nigiri, sashimi, and maki, and a signature bento box dessert creation made from rice flour with chocolate fondant cake and green tea ice cream. 

Matsuhisa is well known for putting his own twist on traditional Japanese fare. Meanwhile, the cocktail menu includes everything from sake infusions and an award-winning Bahamian Samurai cocktail to fresh takes on staples like the Oni Negroni, which is made with Hokusetsu sake and Aperol. 

At Café Martinique, Michelin-starred chef Michael White puts the focus on sustainability with locally sourced food in the adjacent Marina Village. Each dish is like a work of art using local Bahamian ingredients blended with unique Mediterranean-inspired flavours. Appetizers currently range from beef tartare to a creative twist on french onion soup. Mains are seafood or meat centric like a pan seared sea bream with asparagus and gnocchi Parisienne or a venison loin with chestnut bourbon cream. Be sure to leave room for dessert with options like profiteroles with Madagascar vanilla ice cream drizzled with a 70 per cent chocolate sauce. 

Located in The Cove, Fish by José Andrés is another delicious option that pays homage to traditional Bahamian cuisine. The expansive dinner menu features oysters, mussels, tuna tartare, Caribbean grouper, jerk chicken and a vermicelli mac ‘n’ cheese with jumbo lump crab. There are also a multitude of dishes made with conch, a local staple in The Bahamas. A signature beverage is the salt air margarita, which instead of a salt rim features a salt infused foam. 

Notably, Andrés is also the founder of World Central Kitchen, a not-for-profit organization that heads to the frontline around the world to provide meals in response to humanitarian, climate, and community crises. Andrés is currently near the border in Poland to serve warm meals to Ukrainian refugees who are seeking shelter from invading Russian troops.

Get off the beaten path in Nassau

While Nassau, New Providence and Paradise Island are well known for tourism in The Bahamas, there’s still plenty to experience that’s off the beaten path when you head off the resort.

If you want a cold one — or to sample a flight — check out Pirate Republic, the first craft brewery in The Bahamas. There are two locations to choose from, one in the Marina Village at Atlantis and one in downtown Nassau near the cruise port, which has a wider selection of seasonal brews like the B’limey Ale, a cream ale made with toasted lime peel for a burst of citrus; or an imperial stout aged for six months in John Watlings Rum Barrels.

For a unique underwater experience, head to Clifton Heritage National Park to admire the views of its underwater sculpture garden including the mesmerizing Ocean Atlas piece by Jason de Caires Taylor of a local Bahamian girl carrying the weight of the ocean above her. Back on land, the site is home to installations about the islands’ colonial and pre-colonial history. 

Those who like to shop can head to Bahama Hand Prints, a retail shop selling accessories and apparel featuring exclusive designs made using a hand screen printing technique. 




An all-female team of chefs and artisans are bringing their talent to this luxury Mexico hotel

UNICO 20°87° Hotel Riviera Maya, the redefined, adults only all-inclusive hotel located in the heart of the Yucatan peninsula, has announced the women-powered line-up for its fourth annual gastronomy series, Superbia Summer.

This new Canadian airline can take you to The Rockies for less than $100

Dubbing itself an ultra-affordable airline rather than an ultra-low cost carrier, Lynx Air has big plans for the Canadian market. During an event held in Toronto on March 17, CEO Merren McArthur announced a major expansion out of the Toronto region, adding four new destinations and five new routes to its network.

“By the end of July, we will be flying 92 flights per week in and out of the Toronto area, which is more than 17,000 seats per week. This is a big investment for a small startup like us,” said McArthur. “We’re offering really great prices and that’s what we want to do to attract people to our airline, but then we want to earn loyalty from our customers through providing great customer service. Our model is about growing the market share, so we’re not going to steal traffic from our competitors, we want to grow the market.”

In Ontario, Lynx will operate out of both Toronto Pearson Airport and John C. Munro Hamilton International Airport, with service to six destinations: Halifax, St. John’s, Winnipeg, Calgary, Edmonton and Vancouver.

Depending on what time of the year it is, travellers can score deals on fares less than $100 each way to popular destinations like Vancouver or Edmonton.

The newly announced Lynx routes are:

  • Toronto Pearson – Halifax: Three flights per week, commencing June 30, and increasing to five per week from July 30.
  • Toronto Pearson – St. John’s: Two flights per week, commencing June 28, and increasing to seven flights per week from July 28.
  • Toronto Pearson – Edmonton: Seven flights per week, commencing July 28.
  • Hamilton – Calgary: Two flights per week, commencing June 29, and increasing to four flights per week from July 29.
  • Hamilton – Halifax: Two flights per week, commencing June 29.

“We already had three destinations, which were Calgary, Winnipeg and Vancouver on our network map,” she said. “We believe airfares have been far too high for far too long in Canada.”

Lynx is set to takeoff on its first flight between Calgary and Vancouver on April 7, followed by Calgary and Toronto on April 11 on brand-new Boeing 737 aircraft. Lynx will also be increasing its frequencies between Toronto Pearson and Calgary from seven flights per week to twelve flights per week from June 28.

Starting Mar. 10, testing will no longer be required to enter the destination, regardless of vaccination status or country of origin. While the island is known for its  Blue Curaçao, never has it been blended into cuisine, until the opening of Ceviche 91. Located in  the historic Rif Fort overlooking the ocean and the iconic Queen Emma floating bridge, Ceviche  91 is home to the world’s first Blue Curaçao Ceviche, made with local fresh seafood and the iconic  liquor. Other delectable new restaurants include SAL The Kitchen, which stands for “salt” in  Spanish and celebrates the fact that the walls of the restaurant, and specifically the kitchen, were built out of coral, Serafina – the island’s quintessential Italian restaurant with a dreamy patio and handmade pastas, and the lively OBaAR Brazilian Lounge which offers South American cuisine.

When it comes to casual dining, travellers can enjoy the new De Broeders (Two Brothers) Café located in the heart of Willemstad that offers local cuisine with a modern twist, or Bliss the Berry,  the new breakfast and lunch option in Mambo Beach known for fresh, tropical smoothie bowls.

Balancing out these new and modern options are immersive experiences that focus on  highlighting ancestral cooking techniques and true Curaçaoan flavors. Vittle Art is a new  bespoke cooking workshop that takes place in the cacti-filled countryside and focuses on  generations old techniques. Participants forage local and wild ingredients like vegetables, herbs,  and plants, that are grown on the property’s grounds and then learn how to create local dishes  from scratch.

A group lunch is enjoyed in a bohemian setting overlooking the hills and desert like landscape. Further connecting guests with Curaçao’s history, the Pan Sera breadmaking  workshop at Kas di Pal’i Maishi serves as a window into the daily routines of the rural  population from 130 years ago. Small groups learn how to make traditional bread with  resourceful tools, then enjoy an al fresco lunch, pairing their creations with traditional stews.  

Nightlife is back

The popular, walkable district of Pietermaai, known for its boutique hotels, small shops, cozy  cafes, and nightlife scene, is back in full swing. With its picturesque and pastel-colored buildings  and a street donned with sparkling lights, Pietermaai is the quintessential Curaçaoan experience.

Mexico just got a new hotel and it’s home to the highest rooftop bar in Cabo

Occupying prime real estate along the coveted shores of Medano Beach in Cabo San Lucas is Corazón Cabo Resort & Spa, the newest addition to Noble House Hotels & Resorts’ elite collection.
 
Open as of Feb. 24, 2022, the hotel features a new-build tower with 204 rooms and suites, contemporary meeting space, the highest and most lavish rooftop bar in Cabo, two infinity edge pools, and various dining options.

Trendy new aparthotel opens in one of Dublin’s hottest up-and-coming neighbourhoods

Lifestyle aparthotel brand Locke has  announced the official launch of Beckett Locke in the centre of Dublin’s thriving Docklands area. 

The opening will mark Locke’s third location outside of the UK, which also includes the recently opened Zanzibar Locke by Dublin’s Ha’penny Bridge, and Schwan Locke in Munich.

Tucked behind the 3Arena, the 241-studio aparthotel will become a new hub for culture and entertainment in the city. Set around a naturally lit atrium, Beckett Locke features a neighbourhood co-working space, artisan coffee shop, restaurant and intimate cocktail bar in addition to meeting and event space for up to 100 people. Beckett Locke’s beautifully designed apartments (which range from 23sqm to 53sqm) each feature fully-fitted kitchens, living and dining space – making them suitable for short, medium, and long stays.

Designed by the London studio of globally renowned design firm AvroKO in collaboration with local firm C+W O’Brien Architects, the interiors of Beckett Locke take their cue from Dublin’s maritime history and the Docklands’ deep industrial heritage.

The layout of the social spaces are inspired by a traditional Docklands market hall – comprising a co-working area, meeting rooms, cocktail bar, coffee shop and restaurant, all set around a central glass atrium. The assimilation of local narratives flows into the apartments, which feature black steel, exposed concrete and rust-coloured soft furnishings, which evoke the intrepid colourways and history of the Docklands. Unique to Beckett Locke, each studio apartment has been designed in-house by edyn Development Studio.

Beckett Locke also houses three new food and drink concepts by Alan Clancy’s native restaurant group, NolaClan (House Dublin, 9 Below and Xico). ‘North 7th Coffee’ will fuel the co-working space from the early morning throughout the day, serving artisan coffee, delicate pastries, and hearty sandwiches. Meanwhile, ‘The Belis’ restaurant will offer a contemporary Irish take on classic dishes using freshly sourced ingredients. Nestled in a decadent theatre-like setting, complete with rich red velvets and draped chain canopy, ‘Sam’s Corner’ will shake up handcrafted cocktails inspired by Beckett Locke’s namesake, playwright Samuel Beckett. 

Beckett Locke will also host an evolving cultural activation programme where locals and guests can participate talks, events and workshops hosted by local businesses and creatives. This will be complemented by an evolving cultural activation series, which will invite local creatives, brands, and businesses to host talks, workshops and events.

Locke’s hybrid ‘home-meets-hotel’ concept has proven popular among guests seeking flexible accommodation for a night, to a month or longer. Each apartment provides the space and comfort of home – including fully fitted kitchens, adaptable living areas where guests can dine or work, and ample storage – with industry-leading design and guest experience. The opening of Beckett Locke follows the successful launch of the 160-apartment Zanzibar Locke, which opened by Ha’penny Bridge in the centre of Dublin in June this year.

A popular luxury hotel brand is making its debut in Madrid this spring

Thompson Hotels, a luxury brand known for combining curated design and culinary sophistication with the right amount of edge, is all set to welcome its first property in Spain.

Tucked between Cusco and Machu Picchu, in the heart of the Sacred Valley, StarDome Peru, a one-of-a-kind geodesic dome boutique hotel, has officially opened its doors.

Co-founded and run by the local indigenous Quechuan community, StarDome Peru provides curious travellers with firsthand cultural immersions and transformational experiences led by locals.

Accepting reservations starting Feb. 1, the property is the “epitome of rugged luxury, where heated marble floors and handmade ceramic bathrooms are contrasted by an ultra-remote location only accessible through a private road and a staff that, while enthusiastic to serve, is 100% local with no prior hospitality training.

With prime location and deep local roots, StarDome Peru serves as a gateway to the region and is passionate about providing native cultural experiences, nature immersions and spiritual encounters for those seeking not just to travel, but to heal. StarDome Peru’s structure is that of a geodesic dome where the bottom floor offers access to five guest suites and the top floor offers the unique and immersive StarDeck — the heart of the property. Floor-to-ceiling glass walls, 360 degree views and a telescope allow for guests to feel like they are one with the sky. Within the StarDome guests can choose from five suites: the Garden Mountain, Garden Valley, one of two Sacred Valley Suites and the owner’s personal hideout, the Royal Mountain Suite. Inspired by traditional Incan decor and construction, all of the suites include heated marble floors, a private stone shower, traditional Inca-inspired tiling by world-renowned Peruvian ceramic artist Seminario, queen-sized beds, handmade blankets and hotel-like amenities.

Meanwhile, the Royal Mountain Suite offers a luxurious space like no other with double the room, a King-sized bed, a double jacuzzi and a private entrance to the StarDeck, in addition to the most iconic view of the region. Towering above StarDome in a stand-alone, cabin-like structure, the Royal Apu Suite, offers guests the best views and ultimate privacy.  Included with each suite booking is a traditional breakfast at the StarDome’s signature restaurant Apu, with options for private dining experiences that showcase the refined culinary heritage of Peru and highlight local chefs.

Future plans call for as many as ten more suites, a healing center for yoga and groups up to 20 with floor-to-ceiling glass walls and endless views. Guests can book either nightly stays or three to six-day all-inclusive personal retreat packages that cover everything from accommodations and transportation, to meals and curated experiences.

Led by Quechua Inca community members and elders, StarDome guests can take part in unforgettable experiences like healing ceremonies, plant medicine encounters, and natural excursions to some of the area’s most sought-after destinations, such as the renowned Machu Picchu, the Puma Marca Archeological Site, and the ancient village of Ollantaytambo, to name a few.
